People struggling to put food on the table will be enjoying salmon and other fish delicacies after a COVID-positive customer at the Prahran Market forced traders to shut for cleaning.
An incredible 400kg of fresh fish including salmon, kingfish, prawns, scallops, squid, and mussels was donated to FareShare by Periwinkle Fine Seafood to be cooked into nutritious meals.
“It was so disappointing for all the traders at the market but there was a silver lining to the crisis,” said FareShare kitchen manager Crickette DerJeu. “We are incredibly thankful because people in need will be getting delicious meals.”
Extra chefs were called in over the weekend to help process the seafood, including some very large fish which needed expert filleting.
“Everyone was really excited to be cooking such good-quality fish,” said Crickette. “Our experienced chefs were teaching our younger chefs how to pin-bone salmon. We had to rush out and buy some eyebrow tweezers!”
“It was amazing. Everyone did an incredible job. Our volunteers were rapt to be cooking such beautiful meals for people who really need them.”
Dishes created included baked salmon with roasted cauliflower and sweet potato, seafood chowder and salmon with brown rice and broccoli.
